Position: Restaurant Manager

Requirement:

  • Relevant AQF Diploma degree in hospitality field; or
  • No less than 5 years of management experience specialised in Chinese cuisine, and
  • No less than 3 years of management experience in Australian hospitality industry
  • Excellent customer service skills is essential.
  • Mandarin language skill is essential
  • Strong communication, management and interpersonal skills is essential

Responsibilities:

  • Organising and controlling the restaurant’s operation and related establishments to provide dining and catering services
  • Arranging the purchasing and pricing of food, establishing set lunch and dinners according to season changes
  • Creating and developing menu concepts to strengthen business ambitions to open more branches
  • Analysing and understanding diner’s eating habits to develop strategies for continued growth
  • Planning and organising special functions
  • Monitoring records of stock levels and financial transactions for all restaurants
  • Overseeing the appropriate food and ingredient storage
  • Fostering sound relationships with found house staff and kitchen staff
  • Ensuring dining facilities comply with health regulations and are clean, function and of suitable appearance
  • Working with chef to maintain kitchen equipment and plant in good condition
  • Conferring with diners to assess their satisfaction with meals and services
  • Selecting, training and supervising waiting and kitchen staff
  • May prepare for important banquet or private dining functions and some cooking if necessary
  • May take reservations, greet guests and assist in taking orders during busy hours

Position: Chef

Requirement:

  • Proven at less than 5 years working experience as a chef in Chinese restaurant
  • Excellent record of kitchen management
  • Ability to spot and resolve problems efficiently
  • Capable of delegating multiple tasks
  • Communication and leadership skills
  • Keep up with cooking trends and best practices
  • Mandarin language skill is essential
  • Relevant AQF Diploma degree in hospitality field preferred

Responsibility:

  • Plan and direct food preparation and culinary activities
  • Modify menus or create new ones that meet quality standards
  • Estimate food requirements and food/labor costs
  • Supervise kitchen staff’s activities
  • Arrange for equipment purchases and repairs
  • Recruit and manage kitchen staff
  • Rectify arising problems or complaints
  • Given prepared plates the “final touch”
  • Perform administrative duties
  • Comply with nutrition and sanitation regulations and safety standard
  • Keep time and payroll records
  • Maintain a positive and professional approach with co-workers and customers

Position: Kitchen Hand

Requirement:

  • Proven at less than 1 years working experience as a kitchen hand
  • Enjoy practical work
  • Good hand-eye co-ordination
  • Able to work quickly and safely
  • Good personal hygiene
  • Free from skin allergies to foods and detergents
  • Good communication skills
  • Able to work as part of a team
  • Good time management skills
  • Honest and reliable
  • Mandarin language skill is preferred

Responsibility:

  • Wash and clean utensils and dishes, return to the kitchen and make sure they are stored appropriately
  • Clean food preparation equipment, floors and other kitchen tools or areas
  • Clean up spillages when they occur
  • Dispose of rubbish
  • Ensure proper use of chemical/cleaning products and ensure they are stored appropriately
  • Follow all hygiene and Health and Safety regulations within the kitchen
  • Assist the Chef in the preparation and cooking of food as required
  • Follow direction toward portion control, cooking standards and wastage
  • Maintain a positive and motivated work ethic in the kitchen at all times
  • Handle, sort, store and distribute food items
  • Follow instructions from the Chef or nominee
  • Any other duties the employer may reasonably require
